Ooo Eee Ooo Killer Tofu

- 2 lbs firm or extra firm tofu, cut into 1 inch cubes
- 3 tbsps mirin
- 3 tbsps soy sauce (ponzu works best)
- 1 1/2 tbsps sriracha hot sauce
- 1 tbsp cornstarch
- 2 tbsp brown sugar
- 2 tbsp oyster sauce
- 1/4 cup chicken stock
- 1 1/2 cups sweet peas
- 1 12-oz can stewed, diced tomatoes
- 1 white onion, halved and sliced into 1/4-inch slices
- 3 stalks green onions, finely sliced
- 1/4 cup peanut or other cooking oil
- 1/2 tbsp ginger
- 1 tbsp chopped garlic
- salt and pepper to taste
- noodles or rice to serve with as desired

1. Press and drain tofu for 30 minutes. Whisk together stock, oyster sauce, sriracha, soy sauce, mirin and cornstarch.
2. Heat oil on high, though not smoking.
3. Stir fry tofu until browned on each side.
4. Add onion, ginger and garlic, stir fry until softened and aromatic.
5. Add whisked sauce, peas, tomato and sugar. Lower to medium heat and simmer until thickened and peas are softened to your liking.
6. Remove from heat and finish with green onions.
